Vitamin C is a water-soluble nutrient that cannot freely cross the lipid membranes in the gastrointestinal tract, which limits its absorption. Uptake of this nutrient requires carrier proteins, which escort vitamin C across the intestinal membranes to reach the bloodstream. These carriers have a low capacity and are easily saturated, especially at higher doses of vitamin C.
