When the coconut tree is tapped it produces a nutrient-rich "sap" that exudes from the coconut blossoms. This sap is very low glycemic (GI of only 35), is an abundant source of minerals, 17 amino acids, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH.
Coconut Nectar Syrup has high mineral content, a rich source of potassium, magnesium, zinc and iron. In addition to this it contains Vitamin B1, B2, B3 and B6. When compared to brown sugar, Coconut Nectar Syrup has twice the iron, four times the magnesium and over 10 times the amount of zinc.

As a totally natural, low glycemic sweetener it can be used to replace any liquid sweetener at a 1:1 ratio.
